  • Anchovy Zeppoli
  • Preheat Oven:    Cooking Time: 
  • Ingredients:
  • * 3 C Flour    * 1 ½ pkt of Dry Yeast
  • * 1 ¾ C Warm Water  * 3 Cans Anchovies - drained
  • * Oil (for frying)      and dried in paper towels
  •  
  • Directions:
  • Dissolve yeast in a bowl using the warm water.  Combine dissolved yeast and flour in bowl, and then add chopped anchovies.  Allow dough to rise; about 1 hour.
  • Form dough into rounded rectangles or balls using your hands.  Deep fry in hot oil until golden brown.  Remove from fryer and place on paper towels or brown paper bag to remove excess oil.

Ricotta Fritters

Preheat Oven:    Cooking Time:

  • Ingredients:
  • * 4 Eggs     * 1 C Flour

* ½ C Sugar    * 2 tsp Baking Powder

* 1 lb Ricotta    * ¼ tsp Vanilla

* Oil      * Confectionary Sugar

Directions:

  • Combine ingredients in bowl and set batter aside for 1 hour to allow it to set. 
  • Form small rectangular shapes with dough by using
  • your hand.  Place in frying pan in hot oil or deep fry
  • until golden.  Remove and place on paper towel or
  • brown paper bag to remove excess oil.  When cooled, sprinkle with confectionary sugar.

 

Sausage & Apple Stuffing

Preheat Oven:      Cooking Time: 

Ingredients:

* Sausage Meat    * Onions - diced

* Garlic – diced    * Sage

* Poultry Seasoning   * Apples - diced

* Croutons             * Chicken Broth    

Directions:

  • Sauté sausage, onions, garlic, sage, poultry seasoning
  • and apples together until meat is cooked.  Mix in
  • croutons and broth.

Clam Fritters

Preheat Oven:    Cooking Time:

Ingredients:

* Sour Cream    * 3 Eggs

* Green Onion - chopped  * Garlic - chopped

* 1 tsp Baking Powder  * Clam Juice

* Flour     * Clams - chopped  * Salt & Pepper   * Oil – for frying

Directions:

  • Combine sour cream, eggs, green onion, garlic, baking powder, flour, salt and pepper in bowl; mix in clam juice then clams.  
  • Drop by spoonful into frying pan with hot oil or deep fry until golden.  Remove and place on paper towel or brown paper bag to remove excess oil. 

Pizza Dough

Preheat Oven:    Cooking Time:

  • Ingredients:
  • * 5 ½ C Flour    * 2 Pkgs. Yeast
  • * 2 C Warm Water   * 2 Tbsp Sugar
            • * 1 Tbsp Salt  * 3 Tbsp Olive Oil
            • * ½ C Vegetable Oil

Directions:

  • Dissolve yeast in warm water in large bowl.   Add 3C flour, mix well; add sugar, salt and both oils and mix
  • well.   Add balance of flour and allow to rise twice. 
  • Roll out for pizza on oil pan.  Add favorite toppings  and bake.                                                                             

Escarole Mashed Potatoes

Preheat Oven: 375     Cooking Time: 

Ingredients:

* Potatoes     * Butter

* Mild Romano Cheese  * Escarole - cooked

* Salt & Pepper            * Grated Cheese

Directions:

  • Cook escarole and potatoes (separately).  Drain potatoes and mash with butter and cheese.  Add escarole.  Season to taste using salt & pepper.  Spread in baking dish. 
  • Pour melted butter on top and sprinkle with cheese. 
  • Bake at 375 until golden on top.

Potato Casserole

Preheat Oven:   375  Cooking Time: 

Ingredients:

* Potatoes - sliced  * Gruyere Cheese-shredded

* Garlic – crushed  * Salt & Pepper

* Chicken Broth           * Butter

Directions:

  • Grease baking dish with butter.  Spread garlic, salt & pepper in pan; layer potatoes on top; sprinkle with
  • cheese and add another layer of potatoes on top.  Pour enough chicken broth over potatoes until it is level with them.  Sprinkle with cheese and bake in preheated oven until top is nice and brown and the potatoes are cooked.

Easter Biscuits

Preheat Oven:   350   Cooking Time: 30 min

Ingredients:

* 2 Dozen Eggs    * 4 Yeast Cakes

* 1 lb Crisco            * 1 ½ - 2 lb Sugar

* 8 lb Flour            * 1 Tbsp Salt

* 1-2 oz Anise Flavoring * Egg whites

Directions:

  • In a very large bowl or pan mix all ingredients
  • together and allow to rise.  Cut off rope-like pieces and shape anyway you would like.  Put on ungreased cookie sheet and allow them to rise a little more before baking.  Brush with egg whites mixed with sugar before putting
  • in oven.
  • Bake in preheated oven for 30 min or until golden.

Italian Honey Cake

Preheat Oven:    Cooking Time: 

Ingredients:

Dough:

* 2 C Flour    * Sugar

* 3 Eggs     * ¼ tsp Vanilla

  • Coating:
  • * 1 C Honey    * Cinnamon

* 2 Tbsp Sugar    * Colored Sprinkles

* Oil (for frying) 

Directions:

  • Combine flour, eggs, sugar and vanilla in bowl.  Roll dough out to ¼ inch thick.  Cut into strips and then again
  • into nugget size.  Fry pieces in hot oil until golden.  Remove from oil and place on paper towels or brown paper bag to remove excess oil.
  • In sauce pan, combine honey, cinnamon, and sugar and heat. 
  • Place cooked nuggets in honey mixture, coat well and place in serving dish.  Top with colored sprinkles.

Strufoli

Preheat Oven:      Cooking Time: 

Ingredients:

* 2 ½ C Flour    * 1 C Sugar

* 2 Tbsp Shortening   * 2 tsp Baking Powder

* Water     * Honey

* Oil (for frying)   

Directions:

  • Mix flour, sugar, shortening, baking powder and water together, adding enough of the water to form a
  • ball.  Cut into 4 pieces and roll each piece into a rope.  Cut rope into ½ -1 inch pieces; roll into balls.  Deep fry in hot oil until golden.  Place on paper towels or brown paper bag to remove excess oil.  Place cooked balls in a cone shaped heap; drizzle with honey.

Sweet Ravioli

Preheat Oven:      Cooking Time: 

Ingredients:

* 2 C Flour    * 4 Tbsp Crisco

  * Water     * ½ lb Ricotta    * 1 Egg White    * 2 Egg Yolks

  * 2 Tbsp Sugar    * ½ tsp Vanilla

  * Confectionary Sugar  * Oil

Directions:

  •   Combine, flour, Crisco and water in bowl.  Roll out
  •    to ravioli dough thickness and cut into squares.

Filling:

Combine ricotta, egg yolk, sugar and vanilla.

  •    Put a teaspoon full of filling in center of square,
  •    moisten outer edge with egg white and place a second
  •    square on top.  Press down moistened edges with fork.
  •    Deep fry in hot oil until browned.  Remove from oil,
  •    place on paper towel or brown paper bag to remove
  •    excess oil.  Sprinkle with confectionary sugar.
