Angie’s Potato Soup

Preheat Oven:       Cooking Time: 

Ingredients:

* 1 lb bacon     * 2 C chopped Celery

* 2 C Chopped Onion           * 1 C chopped Carrots

* 1 Bunch Scallions – chopped * 1 C Flour

* 2-3 Garlic Cloves – chopped * Salt & Pepper

* ˝ pint Heavy Cream  * 1 Stick of Butter

* 1 Lg can Chicken Broth and 1 reg. can Chicken Broth

* 5-6 Lg Potatoes peeled and cut into cubes

Directions:

  • Begin by cutting up bacon into small pieces and preparing all vegetables.
  • In large pot sauté bacon until almost crisp.  Remove bacon and bacon fat from pot and set aside to
  • use later.  Put butter in pot and add celery, carrots,
  • garlic and chopped onion (not scallions).  Sauté for a
  • few minutes; until onion is tender.  Add flour, stirring until all vegetables are coated.  Add chicken broth and keep stirring until broth thickens.  Add potatoes and allow to come to a boil.  Lower heat and simmer until the potatoes are tender but very firm.  Add bacon and some of the bacon fat, also add scallions and heavy cream.  Allow to boil while stirring for a few minutes.  Remove from heat, place lid on pot and let it rest for 15 -20 minutes before serving.  Salt & pepper to taste.

 

Black Bean Soup

  • Preheat Oven:      Cooking Time: 

Ingredients:

* 1 lb Dried Black Beans  * 1 lb Bacon

* 1 ˝ C Chopped Onions  * Thyme

* 1 ˝ C Chopped Carrots  * Cumin

* * 1 ˝ C Chopped Celery  * Oregano

* Garlic     * Cayenne Pepper

* 2 Ham Hocks    * Salt & Pepper

* 10 C Chicken Broth           * Lime Juice

Directions:

  •      Soak beans overnight prior to using; drain.  Cook
  •      bacon until crisp; crumble.

Mix all ingredients in pot; simmer until beans are tender.

Broccoli Soup

Preheat Oven:      Cooking Time: 

Ingredients:

* Broccoli - Fresh or frozen, chopped  

* Onion             * Butter

* Swiss Cheese - grated                   * Chicken Gravy

* Milk                      * Salt & Pepper

Directions:

  •   Sauté onion in butter; add milk, chicken gravy and
  •       broccoli.  Simmer; then add Swiss cheese and season

      to taste with salt & pepper.

Crisp Fried Bacon

Clam Chowder

  • Preheat Oven:   375   Cooking Time: 

Ingredients:

* 1 stick of Butter   * 1 Onion - chopped

* 6 oz Flour    * 4 C Clam Broth

* Salt Pork Bacon   * 12 oz Clams

* Potato – diced            * Half & Half

Directions:

Cook onion and bacon in butter until onion is tender; add flour and cook for a few minutes stirring constantly.  Add the remaining ingredients and simmer.

 

Escarole Soup with Meatballs

  • Preheat Oven:      Cooking Time: 

Ingredients:

* Chicken Broth   * Fresh Escarole

* Garlic    * Olive Oil

* Small Meatballs   * Grated Cheese

Directions:

  • Clean escarole.  Cook garlic in olive oil, add escarole.  Heat chicken broth; then add escarole and meatballs.
  •      Serve with grated cheese.

Wendy’s Chili

  • Preheat Oven:   Cooking Time:

Ingredients:

* 2 lbs Ground Beef  * 10 oz Can Onion Soup

          •    (not creamy)
  • * 2 tsp Cumin   * Chili Powder
            • * Tabasco   * Tomato Paste
            • * Oil   * Kidney Beans

Directions:

  • Cook beef and drain.  Mix all ingredients together in pot and cook.
