Angie’s Italian Recipes are authentic originals taken from my mother’s hand written cooking notes. Unlike traditional recipes which give complete detailed mixing and cooking instructions, Angie’s original recipes give you the ingredients and her concept of preparing the dish.

All great chefs know that a recipe is incomplete without a cook’s personal touch. Her love for cooking was her signature and this is what makes Angie’s Italian Recipes so unique and famous.

Fish Fillets

with Sesame Seed Parmesan Coating

Preheat Oven:      Cooking Time: 

 

Ingredients:

* Fillets      * Lemon Juice

* Worcestershire Sauce   * Flour

* Eggs      * Sesame Seeds

* Parmesan Cheese            * Oil     

 

Directions:

 Marinade:

  • Mix Worcestershire Sauce and lemon juice together.  Rinse fillets and pat dry.  Place in non-metallic dish.  Pour marinade over fillets.  Refrigerate for at least two hours.
  • Beat eggs.  In separate bowl, mix sesame seeds and parmesan.  Dip fillets in flour, next dip in egg ; then
  • coat with the sesame seed/parmesan mix.  Fry in hot
  • oil, turning once until golden on both sides.

 

Shrimp Scampi

Preheat Oven:   350  Cooking Time: 

 

Ingredients:

* Large Shrimp   * 6 Cloves Garlic - minced

* ¼ C Olive Oil   * Lemon Juice

* ½ C Parsley    * Chili Sauce

* Garlic Powder   * Wine

* Salt     * Oregano   

 

Directions:

Clean and de-vein shrimp.

 

 Marinade:

Mix all ingredients together and pour over shrimp.  Marinate in refrigerator for 2 or more hours.

 

Bake in oven until done.

 

Serve over rice.

 

Orange Roughy

Preheat Oven:      Cooking Time: 

 

Ingredients:

* Fillets      * Garlic Powder

* Flavored Bread Crumbs  * Butter - melted

* Black Pepper    * Salt

* Parmesan Cheese            * Oil - for frying    

 

Directions:

Mix Parmesan cheese and bread crumbs together; set aside.

 

Season fillets with garlic powder, pepper and salt; dip fillets

in melted butter; then the bread crumb mixture.  Fry in hot oil, turning once until golden on both sides.

Shrimp and Mushrooms

Preheat Oven:      Cooking Time: 

 

Ingredients:

* 2 lb cleaned Shrimp          * 1 Box Sliced Mushrooms

* Butter    * 2 Egg Yolks

* Rice - cooked   * 1 pint Heavy Cream

* 3-4 Tbsp Dried Dill  * Black Pepper

* Salt

Directions:

  • Sauté mushrooms in butter first; then add shrimp. 
  • When shrimp has turned pink remove mushrooms and shrimp from pan.  Whisk egg yolks and add to heavy
  • cream.  Add heavy cream mixture, dill, black pepper and salt to the frying pan and simmer for a few minutes.  Add shrimp and mushrooms to the pan and continue to
  • simmer for a few more minutes.
  • Serve over cooked rice.

Shrimp Au Gratin

  • Preheat Oven: 350  Cooking Time: 10-15 min

Ingredients:

* ½ lb Butter    * 1 Onion - diced

* Parsley     * 2 lb Shrimp

* 2 Tbsp Corn Starch  * Water  

* Seasoned Bread Crumbs * 1 C Half & Half

 * 10 oz Monterey Jack Cheese

Directions:

  • Sauté shrimp, onion and parsley in the butter.  Remove
  • shrimp from pan; mix the cornstarch with a small
  • amount of water and stirring, add to pan.  Allow to cook
  • a couple of minutes, stirring constantly before adding the
  • Half & Half and cheese.  Allow to thicken and add shrimp; mixing thoroughly. 
  • Spoon mixture into individual shells or a casserole.  If
  • using shells place them on cookie sheets for ease in baking.  Sprinkle the top with the bread crumbs and bake in
  • preheated oven for 10-15 minutes.

Shrimp Pizza

  • Preheat Oven: 450          Cooking Time: 15-20 min.

Ingredients:

  • * Shrimp - cooked   * Horseradish
  • * Scallions - chopped           * Bacon – cooked crisp
  • * Ricotta Cheese   * Salt & Pepper
  • * Mozzarella - shredded  * Pizza Dough
  • Directions:
  • Form crust from pizza dough (see pg.16 in Misc. section for recipe).  Mix ricotta, horseradish & scallions
  • together.  Spread on crust.  Put shrimp, crumbled bacon,
  • salt & pepper on next.  Evenly spread shredded
  • mozzarella over all.  Place in preheated oven and bake
  • for 15-20 minutes.

Stuffed Clams

  • Preheat Oven:      Cooking Time: 

       Ingredients:

* Bread     * Scallions

* Bacon Fried Crisp   * Butter

* Chopped Clams   * Clam Shells

Directions:

Mix together.  Fill Clam Shells.  Bake.

Lemon Sauce

 

Ingredients:

 * Lemon Juice    * Butter

 * Oregano     * Garlic Salt

 * Water

Stuffed Flounder

  • Preheat Oven:      Cooking Time: 

Ingredients:

* Bread     * Onion or Green Onion

* Celery     * Pimento

* Paprika     * Butter

* Crabmeat    

Directions:

  • Mix together.  Spread on flounder.  Roll flounder.  Place in greased (with butter) baking dish.

Lemon Sauce

Ingredients:

  * Lemon Juice    * Butter

  * Oregano    * Garlic Salt

  * Water
