Angie’s Italian Recipes are authentic originals taken from my mother’s hand written cooking notes. Unlike traditional recipes which give complete detailed mixing and cooking instructions, Angie’s original recipes give you the ingredients and her concept of preparing the dish. All great chefs know that a recipe is incomplete without a cook’s personal touch. Her love for cooking was her signature and this is what makes Angie’s Italian Recipes so unique and famous.

 

Angies Fresh Broccoli Salad

Preheat Oven:      Cooking Time: 

Ingredients:

* Broccoli    * Red Onion - chopped

* 2 Hard Boiled Eggs    * 2/3 C Wine Vinegar

* 2/3 C Olive Oil   * Salt

* 1 tsp Horseradish  * 1 tsp Spicy Mustard

Directions:

  • Cook broccoli until tender: rinse with cold water and allow to drain.  Add onion and chopped egg.

Dressing:

  • Combine vinegar, olive oil, salt, horseradish and mustard. Pour over broccoli.

 

Artichoke Salad

Preheat Oven:      Cooking Time: 

Ingredients:

* Artichoke Hearts - Canned * Chopped Pimento

* Oregano     * Red Wine Vinegar

* Olive Oil             * Salt & Pepper

* Chopped Mint Leaves or Basil

Directions:

Mix ingredients together.

Cabbage Salad

Preheat Oven:     Cooking Time: 

Ingredients:

* 1 Med. Green Cabbage * 2 Red Apples

* ½ Med. Red Cabbage  * 1 C Raisins

* ½ C Red Vinegar  * 2/3 C Olive Oil

* Pinch of Cumin   * Pinch of Chervil

* Pinch of Thyme   * 1 C Sugar (minus 2 tsp)

Directions:

  • Slice Cabbage fine: peel & core apples, slice.  Boil cabbage, apples and raisins for a few minutes.  Rinse under cold water and drain well.
  • Dressing:
  • In bowl combine vinegar, olive oil, cumin, chervil, thyme and sugar.  Beat with wire whisk.  Pour over cabbage mixture and stir.

 

French Salad

Preheat Oven:     Cooking Time: 

Ingredients:

* 2 Types of Lettuce  * 6 Hard Boiled Eggs

* Tomato    * Can Solid White Tuna

* Stuffed Olives   * Ham - Cubed

* Wine Vinegar   * Dijon Mustard

*Oil     * Salt & Pepper

*Tarragon    

Directions:

     Dressing:

  • Mix vinegar, oil, Dijon mustard, tarragon, salt and pepper together.
  • Cut eggs into quarters, tomato into thirds and cube
  •      the ham.
  • Toss with torn lettuce.  Drizzle dressing over the top
  • and lightly toss.

Seafood Salad

Preheat Oven:     Cooking Time: 

Ingredients:

* Squid – cut in rings  * Scallops 

* Shrimp    * Red Pepper - diced

* Green Pepper - diced * Red Wine Vinegar

* Olive Oil    * 3 Lemons – juice

* Garlic    * Salt

* Pepper    * Parsley          

Directions:

       Boil seafood in water; drain and set aside.

  • Mix all remaining ingredients together; pour over
  • cooked seafood; cover and refrigerate for several
  • hours; stirring occasionally.

Shrimp and Cashew Salad

Preheat Oven:      Cooking Time: 

Ingredients:

  • * 1 C Cashews    * 1 C Celery
  • * Frozen Peas    * Green Onions
  • * ½ C Sour Cream   * Lemon Juice
  • * 1 C Mayonnaise   * Cooked Shrimp     

Directions:

Mix together and refrigerate.

Tortellini Salad

Preheat Oven:      Cooking Time: 

Ingredients:

  • * Tortellini - precooked  * Cucumbers - diced  * Wishbone Italian Dressing * Red Onion - diced
  • * Tomatoes - diced   * Black Olives - sliced * Mild Provolone Cheese - shredded         

Directions:

  • Mix all ingredients together; cover and refrigerate for several hours; stirring occasionally.

Zucchini Salad

Preheat Oven:   Cooking Time:

Ingredients:

* Zucchini – sliced  * Anchovies

* Black Pepper   * ¾ C Lemon Juice

* ¾ C Oil    * Black Olives (if wanted)

Directions:

  • Boil zucchini for 5 minutes; drain under cold water. 
  • For dressing, mix anchovies, pepper and lemon juice together.  Slowly whisk oil into mixture.  Pour over zucchini and add black olives if you want.
