Fettuccini

  • Preheat Oven:      Cooking Time: 

Ingredients:

* 2 12 oz boxes Fettuccini  * 1 Qt Heavy Cream

* 1 pt Half & Half   * Parmesan Cheese

* Romano Cheese   * Prosciutto - chopped

* Peas – frozen    * Scallions - chopped

* 1 ½ stick Butter   * Salt & Pepper

Directions:

  •   Cook fettuccini according to package directions and
  •   drain well.
  •   While fettuccini is cooking, prepare sauce.  In
  •   saucepan mix the rest of the ingredients and heat
  •   over medium heat, stirring often.

Pour sauce over fettuccini and serve immediately.

Sausage Jambalaya

Preheat Oven:      Cooking Time:  1 Hr.

Ingredients:

* 1 pkg. Kielbasa   * 1 Lg. Onion

* 1 bunch Scallions   * 1 Green Bell Pepper

* Parsley     * Garlic

* 2 C Tomato Sauce   * 1 ½ C Rice

* 3-4 C Water    * Hot Sauce – to taste

* 2 tsp Salt  

Directions:

  • Cut kielbasa into 1 inch pieces.  Chop onion, scallions
  • and bell pepper.  Add all ingredients to water and bring to a boil.  Turn heat down until pot is just simmering
  • and cook for 1 hour until most of the juice is absorbed and rice is cooked.

Spaghetti Frittata

Preheat Oven:     Cooking Time: 

Ingredients:

* 1 Egg      * Garlic

* Oregano     * Basil

* Romano Cheese   * Salt & Pepper

* Spaghetti – cooked   * Olive Oil

Directions:

  • Mix all ingredients together.  Fry mixture in olive oil
  • until bottom is browned.  Sprinkle with Romano
  • Cheese and place in broiler.  Brown the top.

Spaghetti Pie

Preheat Oven:  350        Cooking Time: 25 min.

Ingredients:

* 1 lb Cooked Spaghetti - Cold *6 Eggs

* Romano Cheese            * Parsley Flakes

* 2-3 C Shredded Mozzarella  * Black Pepper 

* Dried Sausage or Pepperoni – sliced thin

* 1 ½ C Heavy Cream or Half & Half

Directions:

  • Mix all ingredients together.  Spread on greased deep oven dish.  Bake at 350.
