Bread Pudding

Preheat Oven: 350   Cooking Time:  2 hrs

Ingredients:

* 1 Loaf White Bread  * 4 C Milk

* ½ Box Light Brown Sugar * 3 Tbsp Cinnamon

* 2 Tbsp Vanilla   * 1 stick Butter - melted

* Raisins     

Directions:

       Spray a 13x9 inch baking pan with Pam. 

  • Layer bread in pan and sprinkle with raisins.   Make three (3) layers like this. 
  • Mix milk, sugar, cinnamon and vanilla in bowl until sugar is dissolved.  Slowly pour on top of bread, covering all corners and top.  Next spoon all the melted butter over top.  Allow to sit for 15 minutes before baking.  Cover with foil and bake in preheated oven for 1 hour and
  • 15 minutes.  Remove foil and continue baking for another 45 minutes or until most of the liquid has been absorbed.

Serve warm or cold.

Noodle Pudding

Preheat Oven:   350  Cooking Time:  30 min.

Ingredients:

* 1 lb Wide Noodles  * 6 Eggs

* ½ C Sugar            * 6 Tbsp Butter - melted

* 1 C Sour Cream           * 1 lb Cottage Cheese

* ½ C Cream Cheese  * 2 C Milk

* Brown Sugar and Almonds (if desired) desired)

    OR

* Apricot Jam or Honey and Almonds (if desired)

Directions:

  • Cook noodles according to package directions; drain, rinse with cold water and set aside.
  • Mix the remaining ingredients together; pour over noodles; mixing gently.  Put mixture into greased baking dish and bake in preheated oven for 30 minutes. 
  • Remove from oven and garnish with desired topping.  Return pan to oven until topping is bubbly.

Pumpkin Pie

  •    Preheat Oven:     Cooking Time: 

Ingredients:

     * 1 lb Can Solid Pack Pumpkin

* 1 pkg M-T Fine Vanilla Pudding   

* 1 ¼ C Milk    * ¼ C Brown Sugar

* ¾ tsp Cinnamon   * ½ tsp Nutmeg

* ¼ tsp Ginger   * ¼ tsp Salt

* 1 Tbsp Butter   * Pillsbury Pie Crust  

Directions:

  • In sauce pot combine pudding, milk, brown sugar, cinnamon, nutmeg, ginger, salt and butter.  Bring to a boil.  Remove from heat and allow to cool for 5 minutes.  Add pumpkin and blend well.  Pour into pie shell and bake according to instructions for a one-crust pie.

Rice Pudding

Preheat Oven:    Cooking Time: 

Ingredients:

* ½ C Sugar    * ½ C Rice

* 1 Qt Milk    * 2 Eggs

  •   * ¼ tsp Vanilla    * Cinnamon

Directions:

  • Combine milk and water in a saucepan and heat. Add rice, bring to a boil, then simmer uncovered for 25 to 30 min.,
  • or until rice is tender. In a large bowl, mix eggs, vanilla,
  • and sugar. Set aside. Slowly spoon the egg mixture into
  • the rice. Mix thoroughly. Heat until boiling, stirring continuously. Remove from heat and sprinkle with
  • cinnamon.

Tiramisu

  • Preheat Oven:     Cooking Time: 

Ingredients:

* 16-20Lady Fingers  * 3 Lg Eggs - separated

* ½ C Sugar   * 1 C Espresso - brewed

* 2 Tbsp Brandy   * 8 oz Mascarpone Cheese

* Chocolate Bar - shaved  

Directions:

  • Mix egg yolks, sugar, coffee and Brandy in mixing
  • bowl; beat for 2-3 minutes. Next add mascarpone
  • cheese and continue to beat for 3-4 minutes or until smooth; set aside.
  • Beat egg whites with a pinch of sugar u
  • Pour coffee into a flat dish; dip lady fingers in coffee quickly and layer in a serving dish.  Spread with
  • cheese and sprinkle with shaved chocolate.  Repeat
  • process for the second layer.
  • Refrigerate.
