Angie’s Favorite Cakes & Cookies

Almond Cake

Preheat Oven:  375              Cooking Time: 35 Min.

Ingredients:

* 1 ½ C Ground Almonds            * 1 C Flour

* 1 C Sugar               * ¾ C Melted Butter

* Whole Almond (for top decoration)

Directions:

Combine ingredients in bowl. 

Press dough into spring form pan coming up sides about 1 inch.  

Decorate top with whole almonds. 

Bake in preheated oven.

Anise Cookies

Preheat Oven: 350   Cooking Time:  30 min.

Ingredients:

* 6 Eggs     * 1 ½ C Sugar

* 1 C Vegetable Oil   * 1 oz Anise Extract

* 4 tsp Baking Powder  * 1/8 tsp Salt

* 4 ½ C Flour  

Directions:

  • Combine eggs, vegetable oil and anise extract.  Next,
  • mix in sugar, baking powder, salt and flour.  Dough
  • will be stiff.  Spread dough on lightly greased 16x10 cookie sheet.  Bake in preheated oven for 30 minutes.  Remove from oven and cut into rectangles.  Place rectangles on another cookie sheet, keeping them
  • spaced and continue to bake them until golden.

 

Apple Cake

Preheat Oven: 350  Cooking Time: 1 Hr

Ingredients:

* 3-4 Eggs    * 4 oz Unsalted Butter

* ¾ C Sugar   * 1 ½ C Flour

* ¼ C Rum   * ½ C Coffee

* 8 Amaretto Cookies * 2 Tbsp Honey

  * 6 Lg Apples                      * 1 ½ C Almonds- chopped 

  • Directions:
  • Crumble cookies; peel, core and slice apples; brew
  • coffee and set aside.
  • Blend in mixer, eggs (begin with 3 eggs; add the 4th at
  • the end if mixture appears dry), butter and sugar until creamy.
  • Combine with remaining ingredients and pour into lightly greased and floured spring form pan.
  • Place in preheated oven for 1 hour.  Allow to cool
  • before removing from pan.

Blueberry Surprise

Preheat Oven:    Cooking Time:  

Ingredients:

* 8 oz Cream Cheese   * 1 Angel Food Cake

* ¾ C 4X Sugar   * 1 C Milk

* 1 tsp Vanilla    * 8 oz Cool Whip

* Blueberries

Directions:

  • In large bowl combine all ingredients except cake,
  • until blended.
  • Slice Angel Food Cake in half, forming two layers. 
  • Ice Cake with mixture and layer with blueberries.  Replace top layer and repeat. 

 

Cheese Cake

Preheat Oven: 325  Cooking Time:  1 hr 15 min

Ingredients:

  • * 6 Eggs    * 1 lb Ricotta Cheese
  • * 1 lb Cream Cheese  * 1 pt Sour Cream
  • * 1 ½ C Sugar   * 4 Tbsp Flour
  • * 4 Tbsp Lemon Juice  * 3 Tbsp Vanilla
  • * 6 Tbsp Butter - Melted 

Directions:

  • Blend all ingredients together.  Pour mixture into a spring form pan greased with the butter.  Place pan on cookie
  • sheet and put into preheated oven.

Bake for 1 hr and 15 min.  DO NOT OPEN OVEN DOOR.

  • After baking for 1 hr and 15 min, turn oven off and leave cake in oven for 2 more hrs – DOOR CLOSED.
  • Remove from oven and allow to cool for 3 hours before refrigerating over night.

This cake should be made at least 1 day prior to serving.

  • Serve plain or with favorite fruit topping

Chinese Laughing Balls

Preheat Oven:      Cooking Time: 

Ingredients:

* 2 ½ C Flour    * 1 C Sugar

* 2 Tbsp Shortening   * 2 tsp Baking Powder

* Water     * Sesame Seeds

* Oil (for frying)   

Directions:

  • Mix flour, sugar, shortening, baking powder and water together, adding enough of the water to form a
  • ball.  Cut into 4 pieces and roll each piece into a rope.  Cut rope into 1 inch pieces.  Roll each piece in sesame seeds.  Deep fry in hot oil until golden.  Place on paper towels or brown paper bag to remove excess oil. 

Chocolate Macaroons

Preheat Oven:   350  Cooking Time:  15 min.

Ingredients:

* 2 C Flaked Coconut  * 14 oz Condensed Milk

* ¼ tsp Salt    * 1 tsp Vanilla

* 2 oz Unsweetened Chocolate

Directions:

  • Mix all ingredients together. 
  • Drop onto lightly greased cookie sheet. 
  • Bake in preheated oven for 15 minutes.

Coconut Macaroons with Cherry on Top

Preheat Oven: 350  Cooking Time:   8-10 min.

Ingredients:

* 2/3 C Sweetened Condensed Milk

  * 2 2/3 C Flaked Coconut    

  * 1 tsp Vanilla

  * ¾ tsp Almond Extract

  * Candied Cherries   

Directions:

In large bowl combine all ingredients until blended.

Stir in remaining cake mix and chocolate chips.

  •   Drop by rounded teaspoonful about 2” apart onto
  •   ungreased cookie sheet.  Press candied cherry into top.

Bake in preheated oven for 8-10 minutes or until

golden.

Crumb Cake

Preheat Oven:     Cooking Time: 

Ingredients:

* 1 Yellow Cake Mix  * Ingredients for cake mix

* 3 Sticks Butter - melted * 3 C Flour

* 1 C Sugar    * 2 tsp Cinnamon

* 1 tsp Vanilla   * 3 Lemons – juice

* Confectionary Sugar – to be sprinkled on top         

Directions:

Make and bake cake mix according to package

directions.

  •     While cake is baking, melt butter and allow to cool. 
  •     Mix all remaining ingredients together (except
  •     confectionery sugar) adding cooled butter last using a
  •     fork. 
  •    After cake is finished baking, remove from oven and
  •    sprinkle the crumb mixture over the top.  Return pan
  •    to oven and bake an additional 20 minutes.  Remove
  •    from oven; allowing cake to cool completely before
  •    sprinkling with confectionery sugar.

Double Chocolate Bisquick Cookies

Preheat Oven: 350  Cooking Time: 10-12 min.

Ingredients:

* 2 Eggs - beaten   * ½ C Milk

* 1/3 C Oil    * 2 C Bisquick

* 2 pkgs Instant Pudding  * 1 C Chocolate Chips

Directions:

In large bowl combine all the ingredients.

  • Shape by teaspoonful into balls and place on ungreased cookie sheet.

Bake in preheated oven for 10-12 minutes.

Fig Cookies

Preheat Oven:    Cooking Time: 

Ingredients:

Dough

* 10 C Flour    * 3 C Sugar

* 10 Eggs     * 10 tsp Baking Powder

* 1 tsp Whisky    * 1 Tbsp Vanilla

* 1 lb Sweet/Unsalted Butter * 1 C Orange Juice

Filling:

* 1 C Hazel Nuts – roasted * 1 C Almond – roasted

* 2 Containers Dried Figs  * ½ C Honey

* 4 Tbsp Orange or Apricot Preserves

* Zest of 1 Orange   * Zest of 1 Lemon

   * 1 C Black Coffee (Espresso) 

* ½ Bag of Mini Choc.Chips     

Directions:

Dough:

  • Combine all ingredients; mixing well.  Form dough into
  • a ball and refrigerate for about 1 hour until nice and cold.
  • Break small pieces off and roll into small balls.  Place on ungreased cookie sheet.  Press down on center of ball, making an impression with your thumb.
  • Filling:
  • Finely chop nuts and figs.  Mix all ingredients together.  Fill impression with mixture.

Hungarian Cookies

Preheat Oven: 350   Cooking Time: 12 min.

Ingredients:

* ½ lb Butter    * 2 Eggs

* ½ pt Heavy Cream   * 4 C Flour

* Sugar     * Favorite Preserves  

Directions:

  • Combine butter, eggs, heavy cream and flour in bowl. 
  • If dough is too sticky you may add more flour.  Form into ball and wrap first in plastic wrap and then a clean dish towel.  Place in bowl and refrigerate over night.
  • Roll dough out on sugar into a round shape like a pizza.  Thinly spread with your favorite preserves.  Cut into pie wedges and roll up starting at the wide end. 
  • Bake in preheated oven 12 – 15 min. or until bottoms are golden.

Lent Cookies

  • Preheat Oven:   350   Cooking Time:  40 min.

Ingredients:

* 2 Eggs    * ¼ C Butter

* ¼ C Honey    * ¾ C Brown Sugar

* ½ C Reg. Sugar   * 2 C Flour

* 1 ½ tsp Baking Powder * ¼ tsp Cinnamon

* ¼ tsp Cloves   * Almonds - chopped

* Whole Almonds

Directions:

Mix ingredients together.

Brush with Egg mixed with water.

Bake at 350 until browned, 40 min.

Slice when cooled and put back in oven to brown.

 

Peanut Butter Chocolate Chip Cookies

  • Preheat Oven: 375  Cooking Time:   10-12 min.

Ingredients:

* 2 Eggs - beaten  * 1 C Peanut Butter

* 1/3 C Water   * 2/3 pkg Cake Mix

* ¼ C Butter - softened * 12 oz Chocolate Chips

Directions:

  • In large bowl using an electric mixer, beat eggs, water, butter, peanut butter and half of the dry cake mix together until smooth.

       Stir in remaining cake mix and chocolate chips.

  • Drop by rounded teaspoonful, about 2” apart, onto ungreased cookie sheet.

       Bake in preheated oven for 10-12 minutes.

Pineapple Topping

Preheat Oven:      Cooking Time: 

  • Ingredients:
  • * 1 can Crushed Pineapple * 3-4 Tbsp Sugar

* 3 Tbsp Corn Starch  * 1-2 Tbsp Water

Directions:

  • Mix sugar and pineapple together in sauce pan.  Mix
  • cornstarch with water and add to sauce pan.  Cook mixture until thickened and translucent in color.  Remove from stove top and allow to cool thoroughly. 
  • Spread on refrigerated (very cold) cheese cake and refrigerate until ready to serve.

Pinole Cookies

  • Preheat Oven:   325  Cooking Time:  25-30 min.

Ingredients:

* ½ C Sugar    * ½ C 10X Sugar

* ¼ C Flour    * 1/8 tsp Salt

* 2 Egg Whites   * 1 can Almond Paste

* Pinole Nuts   

Directions:

  • Beat egg whites and almond paste together; then mix
  • in dry ingredients.  Form into cookie shape and place
  • on lightly greased cookie sheet.  Bake in preheated
  • oven for 25-30 minutes.

Pudding Bisquick Cookies

  • Preheat Oven: 350  Cooking Time:   6-8 min.

Ingredients:

* 1 C Bisquick    * ¼ C Oil

* 1 pkg Instant Pudding  * 1 Egg

Directions:

In large bowl combine all the ingredients.

 

  •   Shape by teaspoonful into balls and place on
  •   ungreased cookie sheet.

Dip bottom of glass into colored sugar and fla

Bake in preheated oven for 6-8 minutes.

Walnut Balls

  • Preheat Oven:  375  Cooking Time: 10 min.

Ingredients:

* ½ lb Butter    * 4 Tbsp Sugar

* 2 ½ C Flour    * 2 tsp Vanilla

* 2 C Walnuts – finely chopped

* Confectionery Sugar

Directions:

In large bowl combine all ingredients until blended.

  •     Form walnut size balls and place onto ungreased
  •     cookie sheet. 

Bake in preheated oven for 10 minutes or until

golden.

When walnut balls are cooled, roll in confectionery

sugar.
