Cheddar Puffs

      Preheat Oven: 375  Cooking Time: 25-35 min.

     Ingredients:

  • * 1 C Water    * ½ C Butter
  • * ¼ tsp Salt    * 1 C Flour
  • * 4 Eggs * ¾ C Sharp Cheddar Cheese
  • * 1-2 tsp Sesame Seeds                      - Shredded

     Directions:

     Heat water, butter, and salt in sauce pan; bring to boil.

     Stir in flour, stirring constantly until mixture clears

     side of pan.  Remove from heat.  Add eggs, one at a time.

     Beat in ½ C cheese.  Using tablespoon, drop on greased

     cookie sheet about 1 inch apart.  Sprinkle with remaining

     cheese and sesame seeds.  Bake in preheated oven until

     firm and golden brown; about 25-35 minutes.  Pierce top

     of each puff with sharp knife; return to oven and bake for

     5 more minutes.  Serve warm.

                  

Crab Dip

   Preheat Oven:     Cooking Time: 

Ingredients:

        * 1 lb Cream Cheese  * 1 lb Crabmeat

        * Hot Sauce    * Lime Juice

        * Salt     * 1 C Ground Nuts

      Directions:

      Heat all together and serve.

      Suggestion:

      Purchase a loaf of rye, sourdough or pumpernickel

      bread (round or rectangular); remove center (neatly, the

      pieces are to be used to dip with), pour in dip and serve.

 

Salmon Spread

Preheat Oven:    Cooking Time: 

Ingredients:

* 1 lb Canned Salmon   * ½ lb Cream Cheese

* 3 Tbsp Mayonnaise  * 2 Tbsp Horseradish

  • * 1 tsp Liquid Smoke  * Parsley Flakes 
  • * 1Tbsp Lemon Juice

Directions:

  • Make sure you have removed the bones from the canned salmon.  Mix all ingredients together in mixer.
  • Serve on crackers.

Shrimp Toast

  • Preheat Oven:             Cooking Time: 

Ingredients:

* Ground Shrimp    *Green Onion

* Corn Starch    * Sesame Oil

* Egg White     * Fresh Ginger

* Salt & Pepper    * Oil

* Bread – crusts removed, cut into triangles

Directions:

  • Mix all ingredients together.  Spread on bread triangles.
  •     Deep fry in hot oil.

Smoked Fish Pate’

  • Preheat Oven:      Cooking Time: 
  • Ingredients:
  • * 1 lb Fish     * 1 lb Cream Cheese

* 1 Red Onion - chopped  * ½ C Lemon Juice

* 1 C Parsley - chopped           * Crackers

Directions:

  • Blend fish and cheese in blender; add onion, lemon juice
  • and parsley.  Continue to blend until mixture is pate
  • consistency (very fine and smooth).  Serve on crackers.
  • Consider using Bluefish or Whiting.

Spinach Pie

  • Preheat Oven: 350  Cooking Time:
  • Ingredients:
  • * Philo Dough   * 4 pkgs Spinach - chopped

* Feta Cheese   * Cream Cheese

* 4 Eggs    * Onions - chopped

* Olive Oil   * Butter 

Directions:

  • Sauté onions in olive oil and mix with the spinach,
  • feta cheese, cream cheese, and eggs.  Butter 3–4 sheets
  • of dough; place in baking dish; spread spinach mixture on dough and top with 3 more buttered sheets of dough.  Place in preheated oven and bake until golden.

Zucchini Pie

Preheat Oven: 350  Cooking Time: 30 min.

Ingredients:

* 3 C Zucchini   * 1 Med Onion - chopped

* ½ C Bisquick   * 4 Eggs - beaten

* ½ C Oil    * ½ C Parmesan Cheese

* 1/8 tsp Pepper  * ¼ tsp Salt

* 1 tsp Parsley    

Directions:

  • Dice zucchini thin.  Mix all ingredients together thoroughly and pour into lightly greased baking dish.  Bake in preheated oven for 30 minutes.
